Ingredients
3 tbsp Butter
8 Eggs
1/2 cup Cheddar cheese
Sea salt
Black pepper
1 Onion, thinly sliced
1 cup Button mushrooms
2 cups baby spinach
Method
Directions
- With the rack in the middle position, preheat the oven to
180°C. - Butter an 8-inch square baking dish. Set aside.
- In a large bowl, whisk the eggs. Add grated cheese.
Season with salt and pepper. Place bowl aside. - In a large non-stick pan, brown onion and mushrooms
in butter over medium heat. Season with salt and pepper.
Add spinach and continue cooking for about 1 minute,
stirring constantly. - Pour mushroom mixture into the egg mixture. Stir well and
pour into baking dish. Bake the frittata for about 25
minutes or until lightly browned and puffed. Cut frittata
into squares and remove using a spatula.
Easy and delicious, enjoy warm or cold.
