Ingredients
1kg Chicken Thigh
2 cups Almond meal or oat flour
2 Large Eggs
4 Large White Potatoes
1 Punnet Chives, chopped fine
4 Tbs Greek Style Sugar-Free Yoghurt
1 lemon to serve
Method
- Preheat oven 180 degrees. (If using an air fryer, no preheat necessary.)
- Chop potato skin on into quarters, or bite sizes. Steam until cooked through but not soft poke with a fork. If easy turn off and let cool.
- On a chopping board, place the whole chicken thigh. Using a tenderiser flatten the chicken into even 2cm thickness.
- Lightly whisk the eggs in a shallow bowl. Poor almond meal into a separate big bowl. To coat the chicken. Dip 1 chicken thigh in egg, then almond meal mixture, pressing to coat. Transfer to a plate or lined cooking tray. Repeat with the remaining chicken, egg wash and almond meal mixture, pressing to coat well.
- Spray Oil each side of the chicken to coat.
- Cook for 35 minutes or until golden.
- In a large bowl add potato, greek yoghurt and chives. Stir, put into the fridge to cool.
- Once the chicken is golden, cut into halves and serve with salad and lemon.
